read moreOnly once a year do we distill our rare expression of Pechuga Apple Brandy. It’s a reverent nod to Mexican Pechugas and a love letter to Maryland terroir. It’s a drink to share at weddings, late nights with an old friend, and anytime you’re trying to make an impression. It is the only one of its kind.
Asimina Pumila begins life the same as Fumus Pumila, a smoked apple fermentation in an open vat and copper pot distillation. However, during fermentation, we travel to the Maryland countryside and forage for our local flavors: paw paw, persimmon, and black walnut. The final run the Pechuga is done over these local gifts, and to tie it all together, a Maryland Country Ham is suspended in the still above the pot. The ham gives a subtle salinity and savory note to the final product, distilled to proof.
